For those who have egg allergies or sensitivities but would like to dive into a sandwich that is reminiscent of their childhood, try this in place of the “old fashioned” egg salad sandwich!
You will need:
1/2 c Mixed bell or mini bell peppers
1/2 c red and green onions mixed
1/2 c celery
2 cans white beans
4-5 TB of vegan mayo
1/4 tsp turmeric
bowl or roll
Simply drain and rinse canned beans and mash them in a large bowl.
Stir in the minced onions, celery and peppers.
Mash the avocado and stir that in along with the vegan mayo and the turmeric.
Sprinkle salt and pepper to taste and serve in a bowl with rice crackers or on a roll of choice!
