Gluten and Dairy Free Pancakes

You will need:

2 1/2 Cups of Gluten-Free Pancake Mix, I used this

1 Can of Organic Coconut Milk in the can, I used this

2 Tablespoons of Organic Pumpkin Seed Protein Powder, I used this

1 (8-9) 0z jar of Organic Fruit preserves, I used this

2 Tablespoons Raw/Organic and local honey. I used one from a local farmers market close to my house here in NJ.

2 Tablespoons Organic Avocado oil that I purchase at the local BJ’s Warehouse Store but you can get the same one here and

2 Organic Eggs beaten and I get those at my local BJ’s Warehouse, Health Food Store or Farmers Market when open!

pancakepicThis is super easy, just beat the eggs first and place into a large glass mixing bowl then add all of the other ingredients and stir just until lumps are gone. If you find you need more flour just add a little at a time and stir to make it the right consistency.

Heat avocado or coconut oil in pan on medium heat and place mixture one ladle at a time into the pan. When you see bubbles forming all over the pancakes that’s your cue to flip! Let cook for another minute or so and remove and let cool a moment. Add 100% pure maple syrup like this one,
